The Pennsylvania Railroad took its coffee very seriously.  The PRR Dining Car Department’s 1947 Cooking and Serving Instructions Manual states the following:

Coffee is one of the most important items served. A poor cup of coffee can be the ruination of an otherwise good meal. Therefore, it is essential that in the making of coffee, Chefs pay strict attention to the rules and personally make the coffee.

The Pennsylvania ordered its coffee from one of the once famous coffee
